This is my first cake like this and I'm soo proud of myself ! It taste amazing and I hope you like it too :)
The flavors are simple and all you need is high speed blender.
Recipe for pan 22 -25 cm :
Crust (basic)
2 cups oats blended few sec
3 tbsp linseed
3 tbsp peanut butter
2 tsp raw cocoa powder
15 dates ( soak in hot water for 5 minutes )
2 tbsp coconut oil
Millet filling
2 cups millet groats
3/4 freshly squeezed lemon juice
1/2 cup cocosugar ( coconut sugar raw) or stevia, erytrol, honey etc.
1/2 cup cashews - soak cashews for 4 hours or take optional 100 ml coconut milk
1/2 tsp vanilla extract
Carmel on top
1.5 cups dates (30 pieces) - soak dates in hot water for 4 hours or all night
2 tbsp peanut butter
water from soaked dates for good consistency
Chocolate glaze
3 tbsp coconut oil
1 tbsp cocosugar
3 tsp cocoa powder
The crust : Process all dates in blender, add peanut butter, coconut oil at least add oats,linseed,cocoa powder and mixed it together. If it's to dry - add some water .
Place the dough in your cake tin and flatten.
Place in the freezer to set.
Millet filling :
Bowl water (3 cups ) and add millet . Reduce heat to minimum and cook 20 minutes when millet will be overcooked and until the water boils out completely.
Blend millets and add cocosugar, lemon juice , vanilla extract, soak cashews- blend again.
Carmel :
Blend dates with few spoons water from overnight soaked dates and peanut butter.
Chocolate :
Mix all ingredients .
Take dough and add millet cream on top. Cover with foil for the night or min. few hours.
When everything is cooled and ready you need to add on top dates carmel cream and sprinkle peanuts, cashews, chocolate - everything you want to decorate:)
